Michal Burda has been running the neighbourhood bistro, shop and café Triko kafe & colonial U Nikolajky in Prague's Smichov district since 2015 with his wife Maria, where they specialise in good food and drink from small suppliers. This May, together with chef and butcher Vojtěch Kalášek, they opened a second branch called Triko Tábor in the South Bohemian town of Tábor, where, in addition to the shop, they do more cooking – primarily with local ingredients from farmers and suppliers from their nearer and broader surroundings.
